If you are looking for super delicious, hearty yet light and flavourful dish you have come to the right place. Today I am serving you healthy mushroom bolognese recipe which will blow your socks off!
This healthy mushroom bolognese recipe is a fantastic meat-free substitute for a traditional meat bolognese. It has bags of flavor and cooks in a fraction of the usual cooking time.
I have used basic Closed Cup mushrooms to keep it budget friendly. If you want to make it more fancy you could do Chestnut mushrooms with a bit of Shiitake mushrooms or Porcini mushrooms. If the mushrooms are very dirty, use a damp cloth to wipe them off. Don't wash them as they will absorb the water and become tough and rubbery.
The mushrooms will likely fill the pan quite a bit at first, but they will shrink down, so don't be alarmed. I add them in few batches, so they all get a chance to cook properly. Once each batch is cooked I add more, until all of them are cooked.

Healthy Mushroom Bolognese recipe
Ingredients

- 500g mushrooms, diced
- 1 onion, finely chopped
- 1 tablespoon olive oil
- 2 medium carrots, peeled and chopped
- 1 celery stalk,chopped
- 3 cloves of garlic, minced
- 1 tin chopped tomatoes
- 1 tbs tomato paste
- 1 cup vegetable stock
- 2 tbs Tamari soy sauce
- Salt and pepper to taste
- 1 tablespoon freshly chopped parsley
Instructions
- In a large pan heat up the olive oil and add the onion, garlic, carrots and celery
- Fry for couple of minutes or until slightly golden and caramelised.
- Next, add in the mushrooms and fry until they have softened
- Pour the tinned tomatoes in along with tomato paste, vegetable stock and Tamari soya sauce and stir well
- Season with salt and pepper to taste
- Reduce the heat, cover and simmer for 30 minutes or until the sauce is thick and rich.
- Taste, adjust the seasonings and serve with your favourite pasta and sprinkle of freshly chopped parsley
Feel free to replace the canned tomatoes with fresh, peeled and chopped tomatoes. Or try tinned cherry tomatoes in rich tomato sauce. Tesco sells them and they are worth every penny!
