Happy Friday! As you know clean eating focuses on eating wholefoods in their natural state, and avoids anything processed; however it is not just about what you eat, but also the foods you choose, their impact on your health and body, and the actual act of eating. Switch the TV off, put your phone on silent and put the Ipad away, be mindful of what you eat, the taste, texture and how much are you eating. I know this is easily said then done, but try at least once. It is so much nicer and you will feel more satisfied and full.
Today I am sharing with you overnight protein oats with berry compote, yogurt and topped with fresh kiwi. This is a brilliant breakfast or post- workout treat. I used the Vivienne Taslmat Rejuva Sport, my latest addition to vegan protein powders. I think this one is the best in my collection so far with no dairy, eggs, gluten, soya, sugars, sweeteners, wheat or yeast. What it does contain is hemp protein, pea protein, brown rice protein, barley grass, Maca, Creatine, BCAA's and raw chocolate stevia. Absolutely clean! Vivienne is the founder of this amazing brand and she has been featured on BBC1, in Vogue magazine and members of the royal family are among her clients. Recipe:
Ingredients:
Overnight protein oats
1 cup coconut milk (I used Provamel)
1 scoop Rejuva Sport protein
¼ cup oats
2 tablespoons chia seeds
Mix all the ingredients together and pop in the fridge. After 15 min give it a stir and put back in the fridge to set overnight.
Berry compote:
1 cup fresh or frozen berries mixture
2 tbs of water
drizzle of rice or maple syrup
Put the berries and water in a pot and cook for about 10 minutes When the sauce has thickened, add in the rice syrup and stir. Simmer for 2 minutes, remove from the heat and let it cool down a bit.
Get your favourite yogurt and a kiwi and let's start layering. Get 2 jars and layer in this order:half of the overnight oats at the bottom of each jar, half of the berry compote, half a cup of white yogurt in each jar and top with freshly cut kiwi. Deeeelicious!!

Looks delicious, will give them a go. But I'm hoping they will work without the Rejuva Sport protein- @34.95 a pop it's a lot too pricey.
