Hello, hello! Today's post is going to be very simple, straightforward and full of pictures. I love salad, but a proper salad, not the shop bought packs. My salads must be a mixture of veggies and fruit flavoured with lovely dressings and toppings. I eat salad literally every single day...I think in my previous life I must had been either a rabbit or cow (my partner shouts from the kitchen "definitively a cow") Cheeky sod! Let's get started.
3-2-1 dressing:
3 tablespoons Balsamic vinegar
2 tablespoons your favourite clean mustard
1 tablespoon Brown rice syrup
Salt and pepper to taste
Tahini dressing:
1 heaped tablespoon Tahini
juice from ½ lemon
1 tablespoon Tamari soya sauce
3 tablespoons of water
salt and pepper
Apple Cider vinaigrette:
3 tablespoons apple cider vinegar
1 tablespoon Dijon Mustard
1 tablespoon maple syrup
2 tablespoons olive oil
Salt and pepper to taste
Chilli peanut butter dressing
1 cup clean chilli sauce
1-2 tablespoons peanut butter
Curry yogurt dressing
1 cup your favourite yogurt
1 tablespoon curry powder
1 tablespoon lemon
Salt and pepper
Maple and mustard dressing
1 ½ tablespoons Dijon Mustard
1 ½ tablespoons Maple syrup
3 tablespoons white yogurt
1 tablespoon Tamari soya sauce
1 ½ tablespoons olive oil
4 tablespoons balsamic vinegar
Salt and pepper
Tomato salsa
2 cups of chopped tomatoes
½ onion
handful of freshly chopped coriander or parsley
1 teaspoon chilli powder
juice from 1 lemon
2 tablespoons apple cider vinegar
salt and pepper
Whisk everything in a food processor
Most of the time for all these dressings you combine all the ingredients in a blender and blitz until completely smooth and combined. If you dont have a blender, use traditional whisking

What a lovely range of dressings Hedi, I'm always struggling to think of what to add on top of my salads and steamed veggies, so I'll be back at teatime! 🙂
