I am almost embarrassed to call this a recipe, but you all said you wanted me to post this up, so here is the sweet potato toast recipe. Ha! I know, but trust me if you haven’t tried it or heard of it yet, your toast will never taste the same!
The hype around a sweet potato toast recipe has been going on for a good few months. Everyone is mad on it, so I thought I'd try it to see what this craze is all about and boy, it is soooo lovely! It is dead simple, all you have to do is slice your sweet potato into 1 cm thick slices, pop it in your toaster on full power and watch the magic happen.
In my humble opinion, sweet potato toast beats any usual toast. Sweet potatoes are full of vitamins, minerals and nutrients, are just 1 ingredient and digest very well. Now compare this to any kind of bread… I think you get it. I am not saying bread is bad, not at all, especially if you make my homemade spelt bread or wholemeal loaf, it’s just sweet potatoes are better. Also, they contain no gluten - win, win I say!The most challenging part about this sweet potato recipe is the topping. Go mad! I love it with peanut butter, slices of banana and a touch of cacao nibs. Also, mashed up avocado with chilli flakes is a great savoury option, or scrambled eggs with spinach, a poached egg, fried garlicky mushrooms, baked beans or simple jam and almond butter go really well. Just be creative!

Sweet potato toast recipe
Sweet potato toast recipe taking your ordinary toast to the next level. Simple, filling, nutritious and extremely yummy! Gluten free and wheat free.
Ingredients
- 1 sweet potato
- Toppings of your choice
Instructions
- Wash the sweet potato thoroughly and cut the ends off.
- Slice the sweet potato lengthwise into 1cm thick slices.
- Pop the slices into a toaster on max. You will have to toast few times depending on the length of your toaster settings.
- Now all that is left is to top with each slice with your favourite toppings and enjoy!
