I know we are heading to the summer season, but some days are still cold, so it's still perfectly fine whipping up cosy and comforting dishes just like this healthy vegetable stew.

How do you make healthy vegetable stew?
In this stew there is aubergine, courgette, peas, spinach, red onion, garlic, veggie stock and tinned tomatoes, but bend the rule and swap some veggies to whatever you'll find in the fridge.
It's all done in one pot and if you have leftovers or one to make it one day ahead, GREAT! Flavours develop overtime and next day it's even tastier.
You can boosted this recipe by adding chickpeas or beans. It's an easily adaptable recipe, just add more stock if you are adding ingredients in.
