Hello, hello! The delicious aroma of home baking has an instant appeal. I love my treats, and I am certain I am not the only one. Desserts, cakes and cookies can be indulgent without being fattening and unhealthy, just as these lovely cookies show.
This is a very forgiving recipe - if you don't like walnuts, use almonds, if you don't like coconut milk, try rice, almond, or hemp milk! Whatever you have in your cupboard will work just fine when making these lovely and cute thumbprint cookies. As a filling I used Coconut merchant jam which is pure jam heaven, but again you can use anything you like including melted dark chocolate chips or strawberry chia jam (recipe here).
Ingredients:
1 cup of walnuts
¾ cup desiccated coconut
¼ cup coconut milk
1 tablespoon rice syrup or any other sweetener
Coconut jam
Method:
Start by pre-heating the oven to 180 degrees and line your baking tray with baking paper. Next place the walnuts in a food processor and pulse until a flour consistency. Add in the rest of the ingredients and mix until well combined, before popping the mixture in the fridge for 30 min. After 30 min take a tablespoon of the dough and shape into a ball. Then you just make a well with your thumb (don't press too hard). If the cookies crack a bit just neaten up the edges with your fingers and bake it for cca 15 minutes. These cookies need time to firm up, so let them cool down completely before moving from the baking tray. Take a small amount of coconut jam and fill in each well. You could even sprinkle a bit of desiccated coconut on the top. Devour immediately!

Jam
Hi I really want to make these as I have coconut jam already, but I want to use a packet of ground almonds that I have instead of grinding walnuts. What quantity would I need? This is why I prefer baking in grams instead of cups usually 🙂
