It's pumpkin season, so if you fancy trying out some new recipe or unsure what to do with leftovers I have this easy and healthy pumpkin soup recipe for you!
Pumpkin is the perfect seasonal ingredient to cook with this autumn. It's packed with vitamins, fibre, and really versatile. You could make this recipe with canned pumpkin puree, but it's just not the same. Roasted pumpkin is so delicious and adds a lot of natural sweetness especially when roasted to golden perfection.
How do you make easy and healthy roasted pumpkin soup?
It's super easy. All you have to do is roast the pumpkin and carrots in the oven. I like the skin off, but you can leave it on if you prefer. You’ll save time if you don’t peel, and for a soup, the skin will get blended anyway. Next blend in a blender some Snacking Essentials cashew nuts and add vegetable stock and a lot of warming spices. That's it 🙂
The soup will last for up to 5 days in the fridge, but you can also freeze it in an airtight container for even longer.
