A good breakfast is a start to a good day, but you can eat anytime of the day. It comes together in 15 minutes and doesn't contain any eggs, or dairy. It's plant-based, vegan and if you use certified gluten free oats it will be the best gluten free breakfast ever.
It's loaded with wholesome ingredients including oats, nuts, dried fruit maple syrup, blueberries and warming spices. I always use these packs from Snacking Essentials. I made this version with blueberries, but you can substitute with other fruit. I bet chopped apple, raspberries, raisins or even dark chocolate chips would be great.
How do you make Baked Blueberry Oatmeal?
Basically baked oatmeal is like having dessert for breakfast. You mix all dry ingredients together in one bowl and all the wet ingredients in another bowl. Then you mix both bowls together and pour into a greased ovenproof dish. Top it some more blueberries and pop in the oven to bake until golden brown. I like to serve with big dollop of yogurt and drizzle of homemade chocolate sauce.
