    Clean nut and seed clusters

    nuts 2Hello! Glad you've come back. I am a great believer in the health benefits of making my own treats and snacks. When you make your own food, you know exactly what goes into it , you select the ingredients as well as the portions. I love nuts, and if you are reading this you probably like them too. What I don’t like is the shop bought versions full of sugar, additives and processed junk. My nuts and seed clusters are the perfect energy-boosting snack with walnuts being high in essential fatty acids, almonds providing you with magnesium and vitamin B and hemp seeds being an excellent source of vitamin E and Omega 3 and 6. This is a simple and quick recipe and you can experiment with the nuts and seeds you use, just make sure that it adds up to the same weight/amount. Be mindful when it comes to portion control…these are highly addictive

    nuts 1Ingredients:
    1 cup walnuts
    1 cup almonds
    ½ cup hazelnuts
    ½ cup hemp seeds
    ½ cup flax-seeds
    ¼ cup rice syrup or any other liquid sweetener
    ¼ cup cashew nut butter ( you can use any nut butter such as almond or peanut butter)
    ⅓ cup coconut oil, melted
    1 teaspoon cinnamon
    1 teaspoon vanilla extract
    Pinch of salt
    Method:
    Preheat oven to 180 degrees and line your baking tray with baking paper. Next put all the nuts into a food processor and pulse until you get chunky texture. If you don’t have food processor place the nuts in a plastic bag and bash it few times to crush them. In a small bowl, whisk together the rice syrup, coconut oil, cashew nut butter, cinnamon, vanilla and salt. Place  the nut mixture into a big bowl and pour the wet ingredients  over the nuts. Stir until evenly combined and sticky. Pop the mixture in the oven and bake for 15-18 minutes. The clusters should be slightly brown when ready. Allow to cool completely and store in air-tight container.
