    Healthy Raw Reese’s Peanut Butter Cups

    Reese’s Peanut Butter Cups take 2.

    I have been making these all week, trying to perfect them. Yes, somebody had to do this hard work and I think I have nailed it. I know some of you are probably thinking how the devil can this be healthy? Well let’s go through the ingredients one by one and see if they are good or bad.

    First up is coconut oil. Where shall I start? The healthy benefits of  coconut oil are endless, so I will list only a few: boosts energy, helps to maintain a healthy heart, boosts immune system and fights infection, helps to increase digestion and restore normal thyroid function… result: GOOD FOR YOU!
    Next up is raw cacao powder. Another member of the superfood family, bursting with antioxidants, vitamins: B1, B2, B3, B5, B9, E, magnesium, and other essential minerals including calcium, sulfur, zinc, iron, copper, potassium, and manganese….result: GOOD FOR YOU!
    Third  ingredient is brown rice syrup – yes, it is processed and it is sugar, but if you compare it with normal sugar you can’t lose. For me (and I am not nutritionist) as far as sweeteners go, it is all-natural, almost always organic, and one of the healthiest sugar substitutes available on the market….result: GOOD FOR YOU!.... but in moderation.

    Last ingredient is peanut butter – the best one you can have is the one you make yourself. I will put a recipe up how to do so soon, but in the meantime go and do a little research online. There are so many yummy and healthy options and with no added starch, sugar or nasty stuff, and the benefits? Firstly it's a great natural source of protein, an excellent source of potassium, rich in fibre and healthy fats…result: GOOD FOR YOU!

    Raw Reese's Peanut Butter Cups

    So since there are so many health benefits of these Reese’s Peanut Butter cups, does it mean you should eat several of them every day? Absolutely not! But include them in your diet and feel free to have 1 or 2 whenever cravings start creeping out!

    Healthy Raw Reese's Peanut Butter Cups

    Recipe:
    Ingredients:
    ½ cup of raw cacao (you can use cocoa powder too)
    ½ cup of raw organic coconut oil
    3 tablespoons of brown rice syrup (or any of your favourite sweeteners such as honey, maple or agave syrup)
    Peanut butter

    Method:
    Start by melting the coconut oil gently. Then add cacao and mix well. Lastly add the brown rice syrup and stir thoroughly. Now, get your cup cake/muffin cases, preferably silicon and fill them up, a quarter of the way up with the mixture. Pop in the fridge for a few minutes. When you take them out, and they are firm, put a little dollop of peanut butter in the middle of each cup. Top up with remaining chocolate mixture and place back in the fridge for 15 minutes......et voila!

    PS:I love them rich and dark, but if you want them a bit more milky, add a dash of unsweetened nut milk to the chocolate mixture.
