

Vegan sweet potato coconut soup
This sweet potato coconut soup is so simple, that I am not sure I can even call it a recipe. Please remember to use tinned coconut milk, and not the one in the cartoon. The tinned milk is so much creamier and helps to create a delicious thick consistency.

Sweet potato coconut soup
Vegan sweet potato coconut soup recipe made only with 2 ingredients. Naturally sweet with loads of creaminess coming through the coconut milk.
Ingredients
- 2-3 sweet potatoes
- 200 ml coconut milk
- salt and pepper to taste
Instructions
- Preheat oven to 200 degrees.
- Wash the sweet potatoes, dry them and pop them in the oven for 30 minutes or until soft.
- You can cut them up if you want to get it done quicker.
- Once roasted place them in your blender, add salt and pepper, coconut milk and whisk until a lovely smooth consistency.
- Devour straight away!
How simple is this vegan sweet potato coconut soup? I am just in love with it and can't get enough.
