Ahhh, I just love figs, don't you? And now they are in season, so they are soft, yummy and sweet. I could eat them all the time. I eat them with the skin, it gives it a bit more crunch, but also the most vitamins and nutrients are in the skin, so we should I miss out? Baked figs served on a bed of yogurt and sprinkled with nuts and cranberries are the best ever though!
This is not just a great breakfast but a great vitamin-rich healthy dessert or post-workout snack. And it has a nice protein boost too!
Recipe
Baked sweet figs
Simple baked figs recipe that requires minimum ingredients and no special skills...just the way I like it!
Ingredients
- 2 fresh figs
- a drizzle of maple, agave or brown rice syrup, or raw honey
- 1 pot of Provamel white yogurt with no added sugar
- crushed walnuts
- dried cranberries
Instructions
- Start with washing the figs and removing the stalks. Switch on the oven grill.
- Cut up the figs in to crosses and place in oven-proof dish with crosses facing up.
- Drizzle with maple syrup and bake for around 8 minutes. Watch out as the figs can turn brown very quickly.
- Serve with yogurt and generous sprinkle of crushed walnuts and cranberries.
Don't worry if your figs aren't ripe enough, the baking process should soften them enough. If you like simple recipes like these baked figs, you should try my 4-ingredients chocolate granola!
