Now for these absolutely delicious, yummy and protein packed frozen yogurt slices. This recipe is inspired by the lovely Fussy Eater blog, but I’ve changed a few things, such as adding almonds and my usual pea protein. Honestly I am not keen on the taste, but it is so good for me that I still force myself to eat it, or like in this case, hide it in a nice treat. The pea protein flavour is not overpowering, so you won’t even notice it. You can use any protein.
1 cup of your favourite white yogurt (I’ve used Provamel Free from sugar)
1 tbsp of maple syrup or any other sweetener (I’ve used the one from Crazy Jack)
1/2 scoop of your protein powder (I used pea protein from Pulsin)
1 tsp of vanilla extract
handful of crushed almonds
2 handfuls of freeze dried strawberries, raspberries and blueberries (you can use fresh or frozen too)
handful of dark choco chips
handful of desiccated coconut
Mix the yogurt, protein powder, rice syrup, vanilla extract and crushed almonds together. Line a small freezer safe dish with aluminium foil and pour the mixture in. Top with strawberries, dark choco chips and the desiccated coconut. Freeze for 3 hours or until the mixture is solid. Remove from the freezer and let sit for 5 minutes. Cut into slices and enjoy! Store in the freezer for about one month.
