Vegan sweet potato coconut soup, that is it, “exactly what it says on the tin”….. a 2 ingredient soup. The easiest, creamiest and tastiest soup you could possible imagine while still being highly nutritious and belly pleasing. That is if you love sweet potatoes and coconut milk..like me!
Don’t ask me how I come up with all of these quick clean eating recipes, because I honestly don’t know. Well I know why this one happened because during the weekend the only stuff in my cupboard were sweet potatoes and lots of coconut milk from Coconut Merchant. Vegan sweet potato coconut soup
This sweet potato coconut soup is so simple, that I am not sure I can even call it a recipe. Please remember to use tinned coconut milk, and not the one in the cartoon. The tinned milk is so much creamier and helps to create a delicious thick consistency.
Sweet potatoes are nature’s superfood. High in fibre, beta-carotene and magnesium they are great for keeping your blood sugar levels in check while keeping you full for longer and regulating your bowel movement. I eat sweet potatoes almost every single day! Have you ever thought of using sweet potato mash on top of your shepherd’s pie? Try it!
- 2-3 sweet potatoes
- 200 ml coconut milk
- salt and pepper to taste
- Preheat oven to 200 degrees.
- Wash the sweet potatoes, dry them and pop them in the oven for 30 minutes or until soft.
- You can cut them up if you want to get it done quicker.
- Once roasted place them in your blender, add salt and pepper, coconut milk and whisk until a lovely smooth consistency.
- Devour straight away!
