Chocolate protein coconut flour pancakes
I was challenged by Holland and Barrett to come up with some healthier than usual pancake recipes using the some of their products, which were kindly sent to me. I took on the challenge because Pancake Day is literally around the corner. I love being challenged and creating new recipes, but also my whole family loves pancakes especially on Sunday mornings.
I received the following ingredients:
Unsweetened Soya Milk - perfect for baking
Chocolate soya protein – not the cleanest , but it tastes really nice
Coconut flour - I admit I can eat it just like that
Meridian Crunchy Hazelnut butter – this stuff is insane, it taste like Nutella, actually a bit better than Nutella in my eyes
Very Cherry Raw Chocolate – gosh this is good. Sadly this chocolate didn’t make it to the recipe…guess wha,t I ate it .. all of it and didn’t even share one piece with anyone. It is amazing!
Don’t worry if you can’t get all these ingredients. You could always improvise with different plant based milks or different proteins, or just use whatever you’ve got and hope for the best 🙂
Recipe
Chocolate protein coconut flour pancakes
Ingredients
- Pancakes
- 1 scoop Chocolate Soya protein
- 2 tablespoon coconut flour
- 2 eggs
- ½ cup unsweetened soya milk
- ½ teaspoon baking powder
- Coconut oil for frying
- For decoration:
- 1 banana
- Hazelnut butter
- Provamel Soya Coconut yogurt
- Coconut Merchant coconut syrup
Instructions
- Start with beating the eggs and then gradually adding the rest of the ingredients .
- Add the coconut flour last and stir well, making sure there are no lumps and the batter is neither too thin or too thick .
- Before you start frying the pancakes, let the batter stand for 10 minutes so the coconut flour can soak all the moisture .
- After 10 minutes stir again and then pour a full ladle in the pan and fry in a bit of coconut oil for 1-2 minutes on each side.
- Make sure the pancake is nice and flat.
- Once it’s done spread a bit of hazelnut butter, half a banana and roll into a wrap. Top up with yogurt and drizzle with coconut syrup.
