I am very lucky to get some lovely products in the post to test and of course to taste too. So when ChiaBia approached me with their #ChiaBiaChallenge, I couldn't say no, because I love chia seeds, check out my Chia seed pudding recipe below.
These tiny seeds are a plant-based source of energy and they can help you curb those late night cravings for unhealthy foods.
They are packed with antioxidants, rich in omega-3's, fiber, protein and calcium. The amazing power of chia seeds lies in their ability to soak up ten times their weight in water which forms an almost no calorie gel coating.
They will help to bulk up your meals which will result in keeping you full for longer. Try adding them to your porridge, yogurt, dips, smoothies or even soups.
Chia seeds are also a great replacement for eggs in baking and desserts. Of course they taste delicious in my clean chia seed pudding made with coconut milk (the one in the tin), banana and cacao. That's it, 4 -ingredients and nothing else added.
The #ChiaBiaChallenge is basically all about trying chia seeds every day for two weeks, and see what difference they will make. I am more than happy to test this for you guys, so watch out for my next few posts and of course loads of recipes with chia seeds.

Clean chia seed pudding
Simple and quick 4 ingredient clean chia seed pudding recipe that's healthy, creamy, and makes brilliant breakfast, snack or post-workout treat.
Ingredients
- 1 cup full fat tinned coconut milk (make sure nothing is added)
- 2 tablespoon chia seeds
- 1.5 tablespoon cacao (or cocoa powder)
- 1 spotty ripe banana
- Favorite toppings
- Optional :sweetener to taste such as date syrup
Instructions
- Using your blender mix the banana and coconut milk until smooth and no lumps
- Next add the cacao and chia seeds and combine well
- Pour into a jar and refrigerate for an hour or so and devour
- Add sweetener if you prefer sweeter taste

Is cacao easy to get in supermarket? Which aisle would you find it in Hedi?

Niamh, Tesco has it in the gluten free and special food aisle. I buy it online in bulk because it is so much cheaper and better quality. If you are struggling then use normal cocoa powder. Hedi xx

Hi Hedi. I’ve done this dessert twice now, and love it. I just wanted to check, do you chill the can of coconut milk first, and only use the solid, or do you use it at room temperature? Many thanks.
