These clean snickerdoodle cookies are da bomb! I don’t know if it is only me but I find the name “ Snickerdoodle” cookies very cute and funny. This rather tasty cinnamon treat is perfect for when you just need something sweet but not too sweet. Do you know what I mean? They have crispy sides with soft and chewy centres, just lovely.The traditional snickerdoodle cookie recipe is made with sugar, butter and eggs, but my version has no butter, no eggs and no refined sugar. They all have been replaced with healthier and widely available alternatives. I have also swapped the usual almonds for peanut butter meal (finely ground peanuts) but I am sure hazelnuts would also work beautifully. Ingredients:
1 cup Funky Nut Company peanut flour (thank you Julian for sending me some to try it)
1 vegan egg which is 1 tablespoon of flaxseed mixed with 3 tablespoons of water or you can just use normal egg if you prefer
¼ cup melted coconut oil
¼ cup Crazy Jack Brown Rice Syrup or any other sweetener such as maple syrup
1 teaspoon of vanilla
1 teaspoon of cinnamon
sprinkle of nutmeg
sprinkle of salt
½ teaspoonsof baking soda
Method:
Pre-heat oven to 175c and line your baking tray with baking paper. Pop all the ingredients into a food processor and mix well. Transfer the cookie dough in bowl and let chill in the fridge for an hour. Next pinch off pieces of dough little smaller than a table tennis ball and roll into balls. Coat in cinnamon, place on the baking tray and use the bottom of a cup or jar to flatten them out. Bake for 10 minutes,after which they will seem too soft to remove, but they will harden as they cool down. Let cool completely before devouring. They should be chewy and soft, just the way I like it 🙂

Hi, I really want to try these but cannot find peanut meal anywhere? I looked on funkynutco but they dont have it? Is it just the same as Peanut flour?
