About These Apricot Energy Balls
I love dried apricots and think they are a bit underrated. Apricots are one of nature’s own superfoods.
Apricots are full of vitamin A, which is a good source of beta-carotene, and they also pack in fibre, potassium, vitamin C and minerals. I once read somewhere that in the 16th century they were regarded as an aphrodisiac… apricot smoothie anyone..? Just saying, ladies and gentlemen 🙂
Ingredients For Apricot Energy Balls
You will need only 4 ingredients. Here is your shopping list to make this gorgeous recipe
- Apricots - The best ones are un-sulphured ones, but they are not always easy to get. You will need approx.1 cup
- Walnuts - Delicious, creamy and so so good for you. If you don't have walnuts, use any other nuts
- Desiccated Coconut - Makes it slightly coconutty and goes so well with apricots.
- Lemon - You will need juice from 1 lemon. Or lime. Lime works well too
- Water - To help the apricot energy balls stick together.
How To Make Apricot Energy Balls
- Blend walnuts, apricots, coconut and lemon juice in a food processor and pulse until everything is combined.
- Add water to help to bind it all together.
- Roll into walnut-sized balls and chill for 1 hour.
- Devour!
Energy Balls Storage Tips
- To Store. Keep any leftover energy balls in an airtight container in fridge for up to two weeks.
- To Freeze. Place any leftover energy balls in an airtight freezer-safe container for up to 3 months. I love eating them slightly frozen, they become even more delicious.

Apricot Energy Balls

Ingredients
- 150g walnuts
- 150g dried apricots
- 27g dried coconut
- Juice of 1 lime or lemon (could add zest too for extra zing!)
- 2 tablespoon water
Instructions
- Blend walnuts, apricots, coconut and lemon juice in a food processor and pulse until everything is combined.
- Add water to help to bind together.
- Roll into walnut-sized balls and chill for 1 hour.
- Devour!
Notes
You can use any other nuts of your choice.
