Raise your hand up if you're a fan of white beans! They are a great source of fibre, protein and make a delicious and super healthy vegan white bean salad.
Who else is in need of an easy and light Mediterranean inspired meal?? Today I am going for this Greek white bean salad with avocado.
So fresh and packed with flavour. It takes about 10 minutes to prepare and I am sure you have all the ingredients in your cupboard & fridge already.
It's yummy, it’s beans, it’s veggies, it’s protein, it’s iron, it’s fiber, it’s filling, it’s healthy, it’s easy to make, it’s meatless, it’s dairy-free...
Basically, a few good-for-you veggies and parsley tossed with a good olive oil and lemon juice. Does it get any better?
