So fresh and packed with flavour. It takes about 10 minutes to prepare and I am sure you have all the ingredients in your cupboard & fridge already.
It's yummy, it’s beans, it’s veggies, it’s protein, it’s iron, it’s fiber, it’s filling, it’s healthy, it’s easy to make, it’s meatless, it’s dairy-free...
Basically, a few good-for-you veggies and parsley tossed with a good olive oil and lemon juice. Does it get any better?
Mediterranean White Bean Salad Ingredients
- White Beans (I used cannellini)
- Cherry Tomatoes
- Red Onion
- Avocado
- Parsley
- Lime or Lemon
- Garlic powder
- Olive Oil
- Salt and Pepper

I'm almost embarrassed to call this easy bean salad a 'recipe' because it's so simple!
You just throw all the ingredients in a bowl, mix, and enjoy. It couldn't be easier.
How to serve your white bean salad with avocado
I love having this salad on hand to use as a protein topper for other salads, vegan bowls, as a healthy side dish, or of course, as a meal on its own.
It's also a great one to take to BBQ's or shared meals, as everyone loves it!

Easy Vegan White Bean Salad
An easy vegan white bean salad full of good-for-you ingredients. Packed with nutrients and flavour, it's ready in less than 10 minutes!
Ingredients
- 2 tins of white beans, drained and rinsed (I used cannellini)
- 1 big handful cherry tomatoes, quartered
- 1 small onion, thinly sliced
- 1 big avocado, cubed
- 1 bid handful freshly chopped parsley
- 2 tablespoon extra virgin olive oil
- Juice from 1 lime or lemon
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Get a big bowl and add all ingredients in.
- Mix, adjust seasoning to taste and enjoy!
