Oh yes, we are doing this. Easy veggie meatballs are the dish of the day today, my friends. And no, these are not falafels, these are delicious veggie or vegan meatballs made with chickpeas, oats and loads of lovely spices and meat-eater approved!
This may be big news for some people, but vegan/plant-based food doesn't have to be boring, nor does it have to be complicated! These easy veggie meatballs are crispy on the outside, soft on the inside, and full of flavor. Served over spaghetti with rich tomato sauce, these “meatballs” will leave you not only full, but also feeling nicely satisfied.
The star of this dish is chickpea. I love chickpeas, and happily eat them several times a week, either added to things to bulk them up or as the star of their own dish. I have so many recipes here on the blog, think Chickpea scramble, Chickpea omelette with mango salsa, Avocado, chickpea, tomato toast or Spicy roasted chickpeas.
These "meatballs" are not mushy, or wet, they have the perfect texture if you ask me. Basically, you make a flax egg, then add to your food processor chickpeas, oats, lemon juice, spices and salt, roll into balls and bake for a half hour. While they bake, you cook some pasta and warm some tomato sauce (or make your own from scratch).
These easy veggie meatballs are not only great on top of your favourite pasta with tomato sauce, but also as a sandwich filling, a bite-size snack on the go or serve with a big green salad and a loaf of freshly baked homemade bread if desired. Enjoy!

Easy Veggie Meatballs
Easy veggie meatballs is an easy vegan dish for weeknight dinners or work lunches. Prep ahead and freeze the leftovers. Healthy & Gluten-Free too!
Ingredients
- 1 can (400g or 15 oz) chickpeas, drained
- ½ cup gluten- free oat flour (oats processed in a blender)
- 1 flax seed egg (1 tablespoon flax seeds +3 tablespoon water, let sit for 10 minutes)
- Juice from ½ lemon
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon marjoram
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 200C / 400F degrees and line your baking tray with baking paper or tin foil
- Get a food processor and pop in all the ingredients.
- Process until completely smooth. If too dry, add a little bit of water. You need to be able to roll the mixture into balls.
- Taste and adjust the seasonings.
- Form the mixture into balls and place onto the lined baking tray
- Bake for around 25 minutes or until golden and crispy on the outside. Turn over every now again to make sure the balls are baked evenly
Remember to keep these easy veggie meatballs gluten-free use certified gluten- free oats or use almond meal instead. Also if you have add a tablespoon on nutritional yeast to the mixture. It adds a bit of cheesy flavour.
