These healthy roasted almonds and caramel bars are filled with almond, date and chocolate flavours. Just perfect with your morning coffee or afternoon tea.
It's officially autumn when we start seeing caramel bars, apple pies and pumpkin lattes recipes. These bars are my favorite and I have already made second batch this month.
This is another collaboration with Snacking Essentials, who have just launched their brand new range of products in The Food Warehouse. Today we are focusing on their almond and dates. Dates are not only perfect for snacking and baking, but they also create an incredible caramel sauce for which you can find the recipe here.
Almonds are so versatile; you can use them as a topping on your porridge, they add crunch to your Festive Chocolate Bark or give you energy in my Sport Energy Balls.
How do you make roasted almonds and caramel bars?

Roasted Almonds and Caramel Bars
Love your bars with a crunch? My roasted almonds and caramel bars not only crunchy, but satisfying and easy to make. Vegan & Gluten Free
Ingredients
- Bars
- ½ cup almonds +¼ cup for toppings
- 250g (1 pack) Snacking Essentials Dates
- ½ cup walnuts
- ½ cup oats
- 1 teaspoon vanilla extract
- Pinch of salt
- Topping:
- 100gr dark chocolate
- 2 big tablespoon of almond butter (you can use any nut butter)
- 1 teaspoon coconut oil
Instructions
- Start by soaking the dates in boiling water for 5 minutes.
- Preheat oven to around 180 degrees and roast the almonds for around 8 minutes or until slightly dark in colour. Save the ¼ cup for toppings (chopped them up roughly)
- In a food processor pulse the walnuts, roasted almonds, and oats until crumb like texture.
- Next drain the dates and add them to the mix together with pinch of salt and vanilla extract
- Process until you get a sticky mixture
- Get a square baking dish, put the mixture in, press down and spread evenly. Pop int the fridge to set while you make the chocolate topping
- Place the almond butter and coconut oil into a small saucepan and heat on low for a minute or so.
- Next add in the chocolate and stir constantly until the chocolate has melted completely
- Pour over the mixture, sprinkle with chopped almonds gently pushing them into the chocolate.
- Pop it back in the fridge for an hour or so. Take out and slice into bars; devour
How easy are these? Great source of vitamins, minerals, fiber, calcium and potassium. And officially both adult and kid approved...and if that's not a sure sign of success, what is?!
