I love avocados. They're just so darn versatile and adaptable. Plus, they taste great on their own. My favourite way to enjoy them is avocado on a toast with loads of chickpeas and tomatoes or as avocado hummus.

Vegan Lime Pie Ingredients
This simple lactose-free key lime pie recipe requires just 7 ingredients!
For the base you'll need:
- 2 cups mixed nuts (I used almonds, walnuts, cashews and hazelnuts)
- 1.5 cups of dates - pips removed (soak them for around 30 mins first if they're hard)
- 2 tablespoons coconut oil - unrefined organic is best, but any will do.
For the avocado key lime pie filling:
- 1 cup coconut butter (note - this isn't the same as coconut oil)
- 1 ripe avocado
- 4 limes, juiced
- 2 tablespoons brown rice syrup (can use 1.5 tablespoons of maple syrup instead)
How to Make Avocado Key Lime Pie
- Put the nuts, dates and coconut oil in your food processor and process everything into a sticky dough.
- Press the mixture into the prepared pie mold and pop in the freezer to set while you make the dairy-free key lime pie filling.
- Next, make the topping by mixing together the avocado, coconut butter, lime juice and brown rice syrup. This is best done in a food processor or blender to gain a smooth consistency. The cream should be beautifully soft, lush and creamy after mixing.
- Taste and adjust the flavour either by adding more lime juice or more brown rice syrup.
- Pour the filling over the base, and freeze for around 6 hours.
- One frozen keep it in the fridge and top with fresh strawberries and crushed pistachios just before serving.
Will this Vegan Key Lime Pie taste like Avocado?
