With Spring in full swing, the colour and variety of seasonal produce returns to my plate. Cucumber radish salad is a celebration of radishes, because I think we all don't eat them enough.
This cucumber radish salad is not one of those boring, soggy and bland cucumber salads. This one is healthy , crunchy, refreshing, and creamy.
Cucumbers are such a great vegetable. They are refreshing, light and super versatile. Btw. have you made my cucumber lemonade yet?
I love radishes, they're just so pink and pretty. Did you know you could roast them? They taste amazing roasted. You can pickle them too or put them on sweet potato toast with some coconut yoghurt.

Cucumber Radish Salad Recipe Ingredients
The best thing about this bright, fresh, addictive cucumber radish salad recipe is that it requires just 7 ingredients:
- Cucumber! Nice and thinly sliced or you could use a mandoline.
- Radishes. Once again thin slices, so if you have a mandoline, use it for the radishes as well as the cucumber.
- Yoghurt. I used Greek like Soya yoghurt, because I absolutely love it, but you can use any plain white yoghurt.
- Lemon, Salt and Pepper. Combine with yoghurt to make a light, yet creamy dressing.
- Dill. Adds delicious flavour and freshness to the cool cucumbers and radishes
How to Make Cucumber Salad
This recipe is easy to throw together. Here’s all you need to do:
- Add the sliced cucumbers and radishes to a large bowl along with the yoghurt, lemon juice, salt and pepper
- Mix it all together and then add the chopped dill
- Taste and season to taste
- Serve immediately or pop in the fridge to chill until ready to serve

Cucumber Radish Salad(vegan)

Ingredients
- 1 green cucumber, thinly sliced
- 1 bunch radishes, thinly sliced
- ½ cup plain white yoghurt (add more if you like it very creamy)
- Juice from ½ lemon (add more if you want it more zesty
- 1 big handful dill, chopped
- Salt and Pepper to taste
Instructions
- First, add the sliced cucumbers and radishes to a large bowl
- Add the yoghurt, lemon juice, salt and pepper
- Toss it all together and then add the chopped dill
- Taste and season to taste
- Serve immediately or pop in the fridge to chill until ready to serve
